Bacon Veggie Scramble

Bacon can absolutely be part of a healthy breakfast... especially when it's combined with cage-free eggs and organic vegetables!

Ingredients

    1 pce. uncured bacon

    1 tsp. coconut oil

    2 egg

    1/4 c. zucchini

    1/2 c. bell pepper, any color

    1/4 c. diced tomatoes, fresh

    sea salt & black pepper to taste

Directions

Cook the bacon in a pan over medium heat.

In another pan, heat coconut oil over medium heat. Add diced zucchini and peppers to the pan and sauté them for about 3 minutes. Whisk the eggs in a small bowl, and pour over the veggies in the pan. Cook, stirring frequently until eggs are fully cooked. Crumble the bacon and add to the pan. Also add diced tomatoes. Season with sea salt and pepper. Turn heat down and let cook for another minute to heat the tomatoes a bit.
