Bacon Lentil Salad

Great side dish or snack!

Ingredients

    1/2 c. lentils

    1 c. chicken broth

    sea salt to taste

    1 shallots

    1 spg. fresh rosemary

    1 fresh sage

    2 pce. uncured bacon

    2 clove garlic

    1 1/2 tbsp. extra virgin olive oil

    1/2 tbsp. dijon mustard

    1 tsp. balsamic vinegar

    1/4 c. fresh parsley

    sea salt & black pepper to taste

Directions

Wash and rinse lentils; place in a small saucepan with chicken broth. Bring to a boil, reduce heat to a simmer, and cook for 20-25 minutes, until just tender. Drain lentils and return to pot. Season with a little sea salt.

While the lentils are cooking, cut the shallots in half and thinly slice, strip the leaves from the rosemary sprig and mince, and mince the sage.

Cook chopped bacon in a pan over medium heat. Add minced garlic, shallots, rosemary, and sage; cook for 2-3 minutes, until garlic is fragrant and shallots are just tender. Remove from heat.

Whisk together olive oil, Dijon mustard, and balsamic vinegar. Pour into bowl with lentils; toss to coat. Add bacon and herb mixture; stir to combine. Stir in chopped parsley. Season with sea salt and pepper, to taste. Serve warm.
