Bacon and Spinach Egg Muffins

Egg muffins are the ultimate grab-and-go breakfast!


    1 c. mild cheddar cheese

    2 c. spinach

    3 pce. uncured bacon

    3 egg

    2 tbsp. almond milk

    1/8 tsp. sea salt


Wilt the spinach in a skillet over medium-low heat. Cook the bacon and chop it into small pieces. Preheat oven to 350ºF. Line 6 cups of a muffin tin with cupcake liners. Beat eggs in a large bowl. Stir in almond milk, salt, and cheese. Add spinach and bacon to the bowl, and stir to mix well. Divide the mixture among the muffin cups. Bake for 25 minutes. Remove from oven, and let cool for about 30 minutes before removing from pan.
