Bacon and Eggs Florentine

A cheesy breakfast classic that everyone loves.


    2 pce. uncured bacon

    1 c. spinach

    3 egg

    2 tbsp. milk, raw or organic

    1 tbsp. coconut oil

    2 tbsp. feta cheese

    2 tbsp. Swiss cheese


Fry the bacon so that it's cooked but not crisp; then chop and dice it. Chop the spinach. Beat the eggs and add milk. Add the coconut oil to a medium saute pan and heat on medium high heat. When the oil is hot, add the egg/milk mixture. Mix in the bacon, spinach, and cheeses (or top with cheese before serving) before the eggs cook. After about 2 minutes, the egg should be somewhat dry and set in the pan. Just be sure it isn't sticking and can slide around the pan. Get ready to flip the omelet by bringing it to the end of the pan angled down away from you and giving it a hard push; it will go up the pan and flip - just make sure you catch it! If the omelet breaks, don't worry, it will be just as good.

*Cheese is optional, and (if you would prefer) you can use 1/4 cup of one type instead of combining the two (so 1/4 cup of Feta and no Swiss cheese).
