Avocado and Greek Yogurt Chicken

This kid-friendly recipe can easily be modified to fit your tastes by changing up the spices.

Ingredients

    2 oz. avocado

    6 tbsp. Greek yogurt

    1 tsp. paprika

    1/4 tsp. cayenne pepper

    1 clove garlic

    1/2 lbs. chicken breast

Directions

Preheat oven to 425ºF. Line a baking sheet with parchment paper.

In a small bowl, combine mashed avocado, Greek yogurt, minced garlic, and spices. Cut chicken breasts into bite-sized pieces. Put chicken pieces into the avocado/yogurt mixture and stir to coat.

Arrange the chicken on baking sheet and bake for 20-25 minutes. 

*Not a big fan of spicy food? Feel free to decrease the amount of cayenne pepper used.
