Omelets are an easy (and delicious) way to ensure you have a healthy breakfast!
1 tbsp. coconut oil
4 asparagus
2 egg
1 clove garlic
sea salt & black pepper to taste
Heat half of the coconut oil in a pan over medium heat. Trim asparagus spears and cut into 1-inch pieces. Add asparagus to the pan, and cook until tender. Remove from pan and set aside.
Add remaining coconut oil to the pan. Whisk eggs in a small bowl. Stir in minced garlic, sea salt, and pepper. Pour eggs into skillet. While eggs are setting, arrange asparagus pieces on half of the eggs. When eggs have set, use a spatula to fold in half. Continue to cook, letting the insides completely cook through.
