This asparagus recipe is SO simple and jam packed with flavor!
2 lbs. asparagus
2 tbsp. butter
1/4 c. sliced almonds
1 tbsp. lemon juice
1/2 tsp. sea salt
1/2 tsp. black pepper
Snap off the tough ends of the asparagus. Cook asparagus in boiling salted water to cover in a large skillet for about 3 minutes (or until slightly tender). Drain.
Put asparagus in ice water to stop the cooking process. Drain.
Melt butter in a large skillet over medium heat. Add almonds and saute 2-3 minutes, until golden brown. Add asparagus, and cook 3-5 minutes. Toss with lemon juice, salt, and pepper. Serve immediately.
