This is SO good and simple. It's really easy to make, takes a little longer to eat, and it can be a bit messy, but it's totally worth it!
1 fresh artichoke
1 tbsp. butter
1/2 tbsp. lemon juice
sea salt & black pepper to taste
Cook artichoke: You can boil it, or what I do is wrap the artichoke with clear wrap or even a ziplock bag and microwave for about 5 min, or until the inner leaves are tender. You can tell because when you scrape your teeth along the leaf, the leaf comes clean. You can do this with just about all of the leaves. When it gets down to the heart, take a small pearing knife and carefully scrape off the hairs. I dip the leaves and the heart in the butter. For the butter dip, take the butter, lemon juice, garlic salt and pepper, mix together and microwave for about 30 seconds. DELICIOUS!!!
