A simple and delicious Peruvian dish.
4 oz. chicken breast
1/4 c. cilantro, bunch, fresh, organic
1/4 c. green peas
1/2 med. red bell pepper
1/4 c. brown rice
1 tbsp. coconut oil
2 c. chicken broth
Heat coconut oil in a Dutch oven over medium high heat. Add chopped cilantro and chicken, and toss to coat in oil. Cook for about 5 minutes. Add sliced red peppers, and cook for one more minute. Add peas and chicken broth. Cook for 20 minutes. Remove chicken and add rice. Cook for 25 minutes. Top with chicken.
