A quick and easy way to add some excitement to chicken.
1 tbsp. coconut oil
1/3 c. apricot spread, unsweetened, all-fruit, organic
2 tbsp. lemon juice
2 tbsp. water
2 tsp. lemon zest
1/2 curry powder
1/2 tsp. sea salt
1/4 tsp. black pepper
1 lbs. chicken tenders
Combine first three ingredients in a small bowl. Rub mixture over chicken.
Place coconut oil in skillet over medium-high heat. Lightly saute chicken until cooked through. Remove from pan and keep warm.
Add spread, lemon juice and water to pan whisking until smooth. Cook on medium for about one minute. Spoon sauce over chicken. Sprinkle lemon rind on top. Serve.
Cook's note: I have found "organic" spreadable fruit in various flavors in health food stores but you can also find it in grocery stores with the jams and jellies. It's just fruit with no other ingredients. I suppose you could also just puree your own fruit if you wanted to. Haven't tried that.
