Applesauce Oat Muffins

Oats + applesauce + dried cranberries = delicious gluten-free muffins!


    1 c. old-fashioned oats

    1 c. applesauce

    1/2 c. almond milk

    1 egg

    1 tsp. vanilla extract

    1/4 c. coconut oil

    1/4 c. honey, raw

    3/4 c. almond flour

    1 tsp. baking powder

    1/2 tsp. baking soda

    1 tsp. cinnamon

    1/4 tsp. sea salt

    1/2 c. dried cranberries


Preheat oven to 375ºF. Line 12 cups of a muffin pan with liners.

Combine oats, applesauce, almond milk, egg, vanilla extract, melted coconut oil, and honey in a large bowl. Whisk together until fully incorporated. Add almond flour, baking powder, baking soda, cinnamon, and sea salt. Stir until just combined. Fold in dried cranberries.

Divide batter among the muffin cups. Bake for 18-20 minutes, until a toothpick inserted in the center of a muffin comes out clean.

Let muffins cool completely before removing from pan and storing in an airtight container.
