Applesauce Muffins

Gluten-free muffins made with applesauce and raw honey.


    4 egg

    1/4 c. honey, raw

    1 c. applesauce

    1/2 c. coconut flour

    1/2 tsp. cinnamon

    1/4 tsp. ground allspice

    1/2 tsp. baking soda

    1/2 tsp. sea salt


Preheat oven to 400ºF. Line 8 cups of a muffin tin with cupcake liners.

Beat eggs in a large bowl. Add honey and applesauce. Use a whisk to mix well.

In a separate bowl, combine coconut flour, cinnamon, allspice, baking soda, and sea salt.

Stir dry ingredients into wet ingredients, and whisk until no lumps remain.

Pour batter into muffin cups, and bake for 12-15 minutes, until a toothpick inserted in center comes out clean.

One serving is 2 muffins.
