Apple Zucchini Muffins

A taste of summer and fall in one muffin!

Ingredients

    2 tsp. cinnamon

    3/4 c. applesauce

    3 egg

    1 tsp. vanilla extract

    1 1/2 tbsp. honey, raw

    1 c. zucchini

    1 med. red apple

    2 c. almond flour

    2 tbsp. coconut flour

    1/4 tsp. sea salt

    1/2 tsp. baking soda

Directions

Preheat oven to 350ºF. Line 12 cups of a muffin tin.

Combine almond flour, coconut flour, sea salt, baking soda, and cinnamon in a bowl.

In a separate bowl, combine applesauce, eggs, vanilla extract, and raw honey; whisk together. Add dry ingredients to wet ingredients, and mix well. Stir in shredded zucchini and diced apples.

Divide batter between 12 muffin cups. Bake for 25-28 minutes, until a toothpick inserted in the center of a muffin comes out clean. Let cool for 5-10 minutes before removing from pan and storing in an airtight container in the refrigerator.
