A simple tart topped with apples - takes no time to make, but is so delicious!
3 med. red apple
1 med. banana
2 egg
1 tsp. baking soda
1 tsp. vanilla extract
1 tsp. cinnamon
3 tsp. stevia
1 c. old-fashioned oats
16 oz. Greek yogurt
Preheat oven to 375ºF. Grease a cake pan.
Peel 2 apples, core, and cut into cubes. Place apple cubes, banana, eggs, and vanilla extract in a blender. Blend until well combined.
Combine oats, 2 teaspoons of stevia, and baking soda in a bowl; stir to mix well.
Combine wet and dry ingredients, and whisk until well combined. Pour the mixture into the greased cake pan, and spread out evenly.
Slice the remaining apple, and arrange on top of the batter in the cake pan. Bake for about 30 minutes.
Remove from oven. Mix together cinnamon and the remaining teaspoon of stevia; sprinkle the mixture over the tart. Cut the tart into 8 pieces, and top each with 2 ounces of Greek yogurt.
