Fruity muffins -- perfect for fall and easy to make! A great breakfast.
2 c. spelt flour
3/4 tsp. sea salt
1/4 c. coconut sugar
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1 egg
1 c. milk, raw or organic
1/3 c. butter
3/4 c. Gala apple
Preheat oven to 400ºF. Grease a muffin pan or line with cupcake liners.
Sift together dry ingredients in a bowl. In another bowl, combined egg (lightly beaten), milk, and butter. Add wet ingredients to dry ingredients, and stir just until moistened. Add chopped apples. Fill muffin cups about 2/3 full.
Bake for 25 minutes. Toothpick will be slightly moist when testing. Delicious warm for breakfast. Add on egg or two for extra protein, or some nut butter!
