An easy to assemble nutritious stir-fry! Serve with your favorite rice or quinoa on the side.
2 tbsp. green onion
1 lbs. chicken breast
2 lrg. Granny Smith apple
1/2 c. coconut oil
1 tbsp. extra virgin olive oil
1/4 c. honey, raw
1 tbsp. fresh ginger
2 c. white mushrooms
1/2 tsp. red pepper flakes
sea salt to taste
black pepper to taste
Cut chicken into cubes, set aside. Peel apples, if desired, cut into cubes, and set aside.
Heat a skillet, add coconut oil, olive oil, and honey; add chicken cubes, ginger (roughly chopped), and apples. Saute until chicken is cooked, about 7 - 8 minutes. Apples will be tender at this point.
Add the mushrooms (sliced) and season with sea salt, black pepper, and red pepper flakes, to taste. Saute for about 5 minutes until mushrooms are cooked. Garnish with sliced/chopped green onions.
