When I was a child I made this recipe with my father using white sugar and white flour. So I decided to take this old family recipe and adjust it to be healthy and gluten free. This is a tasty alternative to traditional apple pie and is great for special occasions.
6 med. red apple
1 tsp. cinnamon
1 tsp. nutmeg
1 tbsp. oat flour
1/2 c. butter
1/2 c. coconut sugar
3/4 c. oat flour
3/4 c. old-fashioned oats
Preheat oven to 350ºF.
Peel and slice apples. Combine the apple slices with nutmeg, cinnamon, and 1 tablespoon of oat flour. Arrange in a 9-inch round pie plate or 8x8-inch square glass pan greased with coconut oil.
In a separate bowl, cut butter into oat flour until crumbly. Add oats and organic coconut sugar. Mix until evenly distributed and sprinkle over the top of the apples. Bake in oven for 40 minutes or until apples are cooked. (I cover the top of the crumble with foil for part of the baking time to make sure that the top does not burn.) Enjoy!
