Hubby and kid tested and passed with flying colors!
1 1/4 c. milk, raw or organic
2 tsp. coconut oil
1 med. red apple
1 1/2 tsp. baking powder
1/2 tsp. sea salt
2 tbsp. coconut sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. spelt flour
Core and slice apple. Combine all ingredients in a blender, and mix it all up.
Heat coconut oil in a pan over medium-high heat.
Pour batter into the pan a little bit at a time. It's best to make these fairly small because the batter is kind of gooey and it makes it hard to flip them. I made 45 pancakes (that's a lot, so you may want to cut the recipe in half) that were 2-3 inches in diameter, so approximately 4 pancakes were one serving. I topped my pancakes with almond butter and a sprinkle of coconut crystals. Yum!!!
