Flavorful gluten-free pancakes... great for any time of year!
1 med. banana
1 egg
1/2 med. red apple
1 tbsp. almond butter
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. vanilla extract
2 tsp. coconut oil
Mash banana. Add egg and whisk to combine well. Stir in peeled and finely diced apple. Add almond butter, cinnamon, nutmeg, and vanilla. Mix until well combined. Heat coconut oil in a skillet over medium-low heat. Pour batter into the skillet in pancake shapes (this recipe will make 4 small pancakes – how many you cook at one time will depend on the size of your skillet). Cook for a few minutes before flipping and cooking on the other side.
