Delicious! Makes 12 servings.
2 c. berries
3/4 c. coconut sugar
1/4 c. lemon juice
1 tbsp. lemon zest
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 c. old-fashioned oats
1/2 c. butter
1/4 c. spelt flour
3 tbsp. coconut sugar
1/2 tsp. cinnamon
4 med. red apple
Preheat oven to 375°F. Grease a 9x9 baking dish.
To make the topping: In a large bowl, combine oats, spelt flour, 3 tablespoons coconut sugar, and 1/2 teaspoon cinnamon. Cut in butter until mixture is crumbly. Set aside.
To make the filling: Peel, core, and slice the apples. In a large bowl combine apples, berries, 3/4 cup coconut sugar, lemon juice, lemon zest, 1/2 teaspoon cinnamon, and nutmeg. Stir to mix well. Transfer mixture to baking dish.
Sprinkle reserved topping over fruit and bake for about 1 hour.
