These muffins taste delicious with some almond butter!
1 egg
1/2 c. almond milk
2 med. banana
2 med. red apple
1 1/2 c. almond flour
1/2 c. old-fashioned oats
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon
3 tbsp. coconut oil
1/4 c. honey, raw
Preheat oven to 350ºF. Line a muffin tin with cupcake liners.
Combine almond flour, oats, baking powder, baking soda, salt, and cinnamon in a bowl. Stir until well combined.
In a large bowl, combine coconut oil, honey, egg, almond milk, mashed bananas, and grated apple. Mix well (I used a whisk).
Add the flour mixture to the wet mixture a little bit at a time; stirring after each addition.
Pour batter into muffin cups, filling each ¾ of the way. Bake for 20 minutes, until a toothpick inserted in the center of a muffin comes out clean.
