Great for a sweet tooth, occasional snack.
1/2 c. coconut oil
1/2 c. butter
1 c. spelt flour
1 c. brown rice flour
1 c. barley flour
2 tsp. baking soda
1/2 tsp. sea salt
1 tsp. nutmeg
1 tsp. cinnamon
2 c. banana
1 c. honey, raw
4 egg
Mix all the flours, baking soda, salt, nutmeg, and cinnamon in a bowl. Stir together and put aside.
In another bowl add mashed banana (in a food processor or magic bullet), honey, melted coconut oil, melted butter, and eggs (add eggs 1 at a time). Stir well.
Then add the flour mixture into the liquid mixture. Stir just until all mixed together do not over stir - it will have lumps.
Put in 2 loaf pans and cook at 335°F for about 45 minutes. Toothpick should come out clean. Can adjust heat up to 350°F if the oven runs cool.
Can store leftovers in a bag in the freezer.
