Amazing Curry Turkey

Delicious spicy curry, rich with organic coconut milk, and hearty with ground turkey and garbanzo beans. So tasty and satisfying!


    1 tbsp. maple syrup

    1 tsp. curry powder

    1 tsp. turmeric

    1/2 tsp. cayenne pepper

    1/2 tsp. cinnamon

    1/2 tsp. sea salt

    1/2 tsp. white pepper

    1 lbs. ground turkey

    2 tbsp. butter

    14 1/2 fl oz. canned coconut milk

    30 oz. cooked chickpeas

    2 lrg. green onion

    2 clove garlic

    16 oz. vegetable broth


In one pan, brown up the ground turkey. (I added a little of each of the above mentioned dry seasonings to this process also, just to give the meat a little flavor).

In a large pot, melt the butter and saute the green onions just until softened. Then add all of the other ingredients listed and mix well. Bring to a boil, then reduce to a simmer for about 20 minutes. At any point, you can add the cooked turkey meat and let it simmer in the pot with everything else. Taste periodically for flavor heat and curry spice. Season to your liking, the above measurements are only for reference. I like mine strong and spicy!

(It is possible to make all of this in one pot, cooking the turkey first, then removing it to saute the onions and add everything back into that one pot. I never do anything the easy way, but next time I am going to try this!)

I broke this into 4 servings and calculated the beans at 1 cup per serving = 2 carb; meat at 4 oz per serving = 4 protein; butter at 1 fat per serving; and the onion and maple syrup was so minimal it could be counted at a half carb per serving but I didn't count it. I hope this gets tested in the test kitchen sometime so that I'll know if I calculated correctly. Plus, it's just so yummy and filling that I want to share!

Final result: 4 servings each including 4 protein, 2 carb, and 1 fat
