This cake makes the whole house smell heavenly... and it's delicious!
1/2 c. walnuts
2 1/4 c. brown rice flour
1 tbsp. baking soda
1 tsp. baking powder
1 1/2 c. banana
2/3 c. honey, raw
1 tbsp. coconut oil
6 egg
1 tsp. cinnamon
1/2 tsp. ground coriander
1/2 tsp. nutmeg
2 tbsp. yogurt
1 1/2 tsp. vanilla extract
1/2 c. raisins
Preheat oven to 350°F.
In a large mixing bowl, mash bananas. Stir in honey, coconut oil, eggs, cinnamon, coriander, nutmeg, yogurt, vanilla, raisins, and chopped nuts.
In a medium bowl, mix together flour, baking soda, and baking powder.
Add the dry mix to the banana mixture. Stir just until blended. Do NOT over mix!
Lightly grease a 9x13 baking pan. Pour batter into pan and spread evenly.
Sprinkle some cinnamon on top and bake for 25 minutes, or until a cake tester (toothpick) inserted in center comes out clean. Do not over bake!
This makes 12 servings.
