2 rice paper
1 3/4 c. almond meal
2 egg white
1/4 c. sliced almonds
1/2 c. coconut sugar
Preheat the oven to 160C/325F/Gas 3.Line a baking tin with rice paper.Whisk the egg whites until foamy. Add the ground almonds and xylitol to the egg white and fold gentle until the mixture forms a firm paste.put mixture in a forcing bag and pipe into 12 small balls. Space a good 2-3cm apart on the baking tray. Press a 1/2 almond onto the centre of each macaroon. Bake until lightly coloured, about 15 minutes. Cool on a wire rack (over cooking makes them more hard)
