My kids LOVE these gluten-free cookies!
1 1/2 c. almond flour
1 tsp. baking powder
1 c. raisins
2 tbsp. coconut oil
1/4 c. honey, raw
1 tbsp. orange zest
1 egg
Preheat the oven to 360ºF (180ºC). Mix the almond flour, baking powder, and chopped raisins in a bowl. (It's important that you mix this together and the raisins get a good coat of flour - this way they won't sink to the bottom of the cookie when you bake it.) Melt the coconut oil (or substitute butter). In a separate bowl, whisk the egg. Then add the honey, orange zest (optional), and melted coconut oil or butter. Mix the egg mixture into the almond meal mix and stir. The mixture should be quite wet. Like a baking sheet with parchment paper. Spoon the mixture onto it in 12 little mounds. Bake for 8-10 minutes - keep an eye on it and take out of the oven when the tops are golden and still a little soft to the touch. Let the cookies cool for a few minutes on a wire rack before indulging!
