A crispy thin crust pizza, perfect for those nights you're craving pizza.
2 c. almond flour
1/2 tsp. garlic powder
1/2 tsp. sea salt
2 egg
1 tbsp. coconut oil
4 oz. cheese, any type
4 tbsp. tomato sauce
Preheat oven to 350ºF.
Combine almond flour, garlic powder, sea salt, eggs, and melted coconut oil in a bowl. Mix until all ingredients are well combined. Divide "dough" into 2 portions and roll into two balls. Place each ball of "dough" between two sheets of parchment paper and flatten with your hand into a thin round crust. Remove the top layer of parchment paper and place crust (with the bottom piece of parchment paper) onto a baking tray. Bake crust for 8-10 minutes. Remove the pizza crust and flip it over. Add tomato sauce, grated cheese, and any toppings you'd like. Bake for another 10 minutes.
Note: Make sure toppings are well drained and dry. I sauteed onions and mushrooms in a little bit of coconut oil to remove water. (Be sure to add P/F/C counts for any toppings you add.)
