Delicious dairy-free and gluten-free recipe for pancakes. These make a wonderful meal any time of the day.
2 egg
1 tbsp. almond extract
1/4 c. water
1 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1 tsp. coconut sugar
2 tbsp. coconut oil
2 tbsp. almond butter
2 tbsp. stevia
Combine all ingredients (except for coconut oil) in an electric mixing bowl and stir on medium or use a blender until the batter is smooth.
Heat the coconut oil in a pan over medium heat until it dissolves.
Pour 1/4 cup of batter into the pan and keep it on low flame. This way, once it starts to bubble on one side, you can flip it. Once both sides are completely cooked, top with a little stevia or honey, and enjoy with berries on the side!
