Delicious cookie that's perfect for breakfast or a snack!
2 banana
1/3 c. almond butter
2/3 c. applesauce
1 scp. Spring of Life Plant-Based Protein Powder, vanilla
1 tsp. vanilla extract
1 1/2 c. old-fashioned oats
1/4 c. chopped nuts
1/4 c. chocolate chips
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
In a large bowl, mix mashed banana and almond butter until completely combined. Add in applesauce, vanilla protein powder, and vanilla extract. Mix until all are completely combined. Add in oats, chopped nuts (optional), and chocolate chips (optional). Combine well. Let dough rest for 10 minutes.
Drop cookie dough, by spoonfuls, onto baking sheet and lightly flatten cookies into circles. Bake cookies for 20-30 minutes, or until golden brown. Remove from oven, and let rest on baking sheet for 5 minutes before moving to cooling rack. When cookies are completely cool, store in a covered container.
Makes about 16 cookies. Serving is 2 cookies.
