All-Protein Pancakes

- These are by far the simplest pancakes I have ever made. I received this recipe from a fellow member and couldn't believe how perfect it is! I've used them as both pancakes and bread for a sandwich.

Ingredients

    2 egg

    2 tbsp. canned coconut milk

    2 tbsp. coconut flour

Directions

  1. Beat together eggs and coconut milk.
  2. Add coconut flour and mix.
  3. Pour 1/4 cup-fulls of batter onto a griddle or skillet and cook for about 1 min each side, or until cooked. (Be sure to check often because they burn easily.)
  4. Top with topping of choice. (My favorite is coconut oil and mashed berries.)

This recipe can be easily adjusted by adding or subtracting one of each ingredient. For example, if you need one protein, use 1 egg, 1 tbsp of coconut milk, and 1 tbsp of coconut flour, and if you need 3 protein, use 3 eggs, 3 tbsp of coconut milk, and 3 tbsp of coconut flour. Determine the amount of protein per batch by the number of eggs used. Enjoy!
