Serve over 1 cup of BD-approved noodles (add 2 carbs) & 4 oz of chicken (add 4 protein).
1 tbsp. extra virgin olive oil
3 clove garlic
3 c. vegetable broth
3 c. cauliflower
1/2 c. parmesan cheese
Bring the stock to a boil and add the cauliflower. Cover and cook for 5-6 minutes until the cauliflower is tender. Transfer the cauliflower, including liquid, to a blender and blend until smooth. Add the cheese and continue blending. You can add more stock or milk to thin the sauce to your liking. Season with salt and pepper before serving. and pepper to taste.
