My favorite restaurant, my "Cheers" place, offers this breakfast choice, which fits the plan perfectly when eaten with an egg, cooked as you wish. I ordered a poached egg, since I knew Gary doesn't cook restaurant meals with coconut oil!!! :~) When I complimented him on the dish and told him I was trying gluten free, he informed me that they also carry GF breads and muffins. I guess you just need to ask!
1 tbsp. coconut oil
1/4 c. sweet potato
1/4 c. red apple
1/4 c. onion
2 oz. Italian turkey sausage
1 red bell pepper
1 sea salt
Cook the sausage in the coconut oil a small saucepan. Remove the sausage and sweat the veggies, adding a little Celtic sea salt. Return the sausage to the pan and heat through. Meanwhile, prepare your egg as you like it. You might add it to the skillet and scramble everything.
