A friend gave me this recipe and while it may not be as flavorful as traditional bread, it is wheat free, low-glycemic, high in protein, and high in fiber. You can always butter it with some organic raw butter or add some plan appropriate toppings whether almond butter, eggs, fruits or veggies.
6 egg
1/2 tsp. sea salt
3/4 c. coconut flour
1/2 c. coconut oil
Mix all ingredients together and pour into a small bread pan greased with a little coconut oil.
Bake at 350°F for 40 minutes.
Flip the bread out onto a towel or plate and leave it to cool for a while. If you greased the bottom well and didn't miss any areas, it should flip out pretty easy. Be aware that this bread is dense and will not rise very high.
