2 Ingredient Pancakes

Two ingredients, that's all you need!

Ingredients

    1 egg

    1 med. banana

Directions

Mash the banana in a bowl with a fork or potato masher.

Crack the egg into the bowl on top of the banana.

Using a fork or a whisk, complete combine the egg and banana.

Heat coconut oil or butter in a skillet over medium heat. Pour batter into skillet in small circles. (Smaller pancakes are easier to flip.) Cook until you see bubbles form and the edges starting to cook. (It does not take as long as regular pancakes.) Flip the pancake and cook through on the other side.

Consider adding vanilla, cinnamon, blueberries, or chocolate chips for added flavor.

You can also add baking powder (⅛ teaspoon) for fluffier pancakes.
