Spicy Chicken Enchiladas

If you are looking for something with lots of flavor and easy to make, try these, my family loves them. You can even sustitute with beef, turkey, pork or any type of meat you want.
Ingredients
2 large chicken breast cooked in water until tender about 20 min
1 tablespoon coconut oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
4 small swg tortillas
1 8 oz can organic tomato sauce
2 tablespoons chili powder
1/2 tsp cumin
1/2 tsp garlic powder
8 oz raw chedder cheese shredded
Directions
cook the chicken breast in water about 20-25 minutes until tender set aside to cool. meanwhile in a small sauce pan pour tomato sauce into pan put in 2 tablespoons chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder cook over med heat stirring until bubbly and thick. set aside. spray a 9x9 inch square pan with coconut oil pan spray, place 2 tablespoons sauce in bottom of pan. set aside. debone and remove skin from chicken breast shred with hands put 1/2 tsp garlic, 2 tbsp chili powder, 1/2 tsp cumin and 1/2 tsp onion powder into a bowl and toss with the chicken. heat coconut oil in a small skillet over med heat put chicken with spices into pan and cook until hot thru about 10 minutes. lay the 4 swg tortilla shells on a flat surface and devide chicken mixture evenly over the center of each tortilla, roll up and place seam side down into square baking pan. cover with rest of the sauce and evenly sprinkle cheese over the top. bake in 375 degree oven for 15-20 minutes till bubbly. serve with shredded lettuce
