Curry, Lentil and Beef Soup

This hearty and delicious soup was more one one of those accidents rather than really a plan. The delicious broth and spice left me yearning for my next mealtime! Hope you enjoy it too! Great for quenching lentil soup cravings while incorporating the protein!!
Ingredients
2 carrots
1/2 large yellow onion
1 lb ground beef (preferably organic and grass fed!)
5 stalks of celery
3 tbsp madras curry powder
tip of a tsp cayenne pepper
1 tbsp rosemary
1 tbsp dried parsley
1 tbsp thyme
1 tbsp coconut oil (or butter)
3/4 of a cube vegetable bouillon (rapunzel
1/2 cup tomato sauce
brown rice
2 cloves of garlic, minced
1 cup of lentils (any but I use brown)
Directions
sauté onions in coconut oil until almost clear
add carrots
add celery and curry, thyme, rosemary
add garlic
brown beef among cooked veggies, break into pieces chili style,
when beef is about completely done add tomato sauce and cover with water until an inch separates the ingredients from the water surface
add lentils
after a while add bouillon, cayenne and parsley
boil/simmer until lentils are done or for at least another 45 mins.
serve hot with a few spoons of brown rice per serving. enjoy!
