1/4 lb (4 oz) Ground Beef or Buffalo
1/4 Onion, Diced
1/2 Cup Oatmeal
2 oz Cheddar Cheese
1/4 Cup Carrots, Diced
Cumin (Comino), to taste
Red Pepper Flakes, to taste
Chili Powder, to taste
Hot Pepper Sauce, if desired. We used Chalula
Steam carrots and onions together (Try steaming in a covered dish in the microwave, with a little water, for a couple minutes. Works great). Mix all ingredients together in a large bowl. Form into a loaf in a glass baking dish. Add 1/4 cup of water, more or less depending on how moist you want the meatloaf, in the baking dish, around the loaf. Bake at 350F for 20 minutes.
The one serving listed is for this entire recipe. To make more servings, just multiply the ingredients. Baking times will vary. If you're not sure if its done, stick a knife in it to see.
