Sweet and Sour Slow Cooked Pork Chops

Serve with a side of Isabel Approved rice or quinoa. An easy crock pot dinner.
Ingredients
1 tablespoon organic extra virgin olive oil
2 boneless pork chops
1/2 cup fresh squeezed orange juice
1 1/2 cups homemade chicken broth, or organic chicken broth
2 tablespoons honey (or Steviva, to taste)
1 clove fresh organic garlic, minced
1 teaspoon orange zest
1 1/2 teaspoon arrow root
2 tablespoons cold water
Directions
In a large skillet, heat oil over medium-high heat and add pork chops. Cook 1-2 minutes on each side, until lightly browned. Remove chops and set aside. In the crock pot, combine orange juice, broth, honey, garlic and orange zest. Stir to mix and add the pork chops, turning to coat with sauce. Cover and cook on low 6-8 hours, or on high for 4-6 hours, until tender. I try to baste the chops a few times while they are cooking, but not necessary. Remove chops and pour sauce into a medium sauce pan. Combine cold water and the arrow root and stir to mix. Bring sauce to a simmer and add the arrow root mixture, cook until slightly thickened. Serve sauce over pork chops and rice or quinoa.
