Sweet Banana Oat Muffins

These fluffy, flour-less, muffins have the perfect balance of banana, sweetness, and oats. Please enjoy :) Each muffin is 1 carb and .5 protein.

Ingredients

2 1/2 cups Old Fashioned Oats
2 dashes Cinnamon
1/4 cup Coconut Palm Sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3 ripe bananas, mashed
2 organic eggs
1 tsp Vanilla Extract
1 cup Greek Yogurt

Directions

1. Adjust oven rack to middle position and preheat to 400F. Place paper baking cups into 12 muffin tin.
2. In medium bowl, whisk eggs. Add bananas, yogurt, and vanilla. Mix to combine. In separate large bowl, mix together all dry ingredients. Fold wet into dry. DO NOT OVERMIX.
3. Spoon batter into baking cups. Bake for 15-20 minutes. Turn pan half way through baking (to ensure even cooking.) Let rest in pan for 10 minutes. Serve.
