Summer Salsa

Summer Salsa Salad with all the in season fruit & veg. Great with grilled fish or taco's!

Ingredients

1 Large Yellow Peach
1 raw fresh Corn on the cob
1 Red Bell Pepper
1/2 medium red onion
1 strand of Spring onion
3 sprigs of Cilantro
Juice of 2 Limes

Directions

*In a Food Processor or Mini Chopper chop the following
Be sure to note make a pulp, only chop till fine!
Pitted Peach, Cilantro, Spring Onion - Scoop out into bowl
*Manually chop the rest of the ingredients
* Strip the Corn
*Mix all ingredients in a bowl
*Roll the limes before cutting them open, then squeeze juice over ingredients and mix
*Let stand outside fridge for about 20-25min, then serve
