Spicy Vegetable Rice (spicy optional)

This is one of my favorite things lately! and for meet eaters you can add chicken and it would be good too.

Ingredients

1 cup brown jasmine rice, 3 cups organic vegetable broth, 2 medium tomatoes, 3 green onions, half small yellow onion, 1 red bell pepper, 1 medium zucchini, 2 pressed garlic pieces, raw cheddar cheese
2 tbls (less if you dont like spicy) dried red chili pepper flakes, pepper, dried basil, thyme. these are all seasonings you can pick your favorites

Directions

bring broth to a boil, put rice in. turn down heat let simmer, add all vegetables and spices, let simmer 50 min total from placing rice in. broth should be gone. plate, and sprinkle some shredded cheese on top!
