I find it difficult to get enough fibre in my "Protein type" diet plan, so I made this for breakfast.
Ingredients
2 eggs
1/4 cup cottage cheese
1 tbsp ground flax seed
dash of cumin
salt and pepper to taste
1 tsp olive oil for frying (I use a olive oil mister that sprays)
Directions
Mix all the ingredients in a bowl and fry it up!
Serve with fresh tomatoes or fruit to make a complete breakfast.
