Potato Salad for One

Summertime and cookouts remind me of my childhood. My mother made this often. It is a family favorite. I have pared it down to one serving for the BD program but can easily be multiplied for any number of servings. Yummy and filling

Ingredients

4 oz cooked potatoe cubed
1 hard boiled egg chopped
2 T BD Homemade Mayonaisse
1T finely chopped onion - optional
2 green olives finely chopped - optional
1/4 -1/2 tsp prepared mustard - optional
Sea salt and black pepper to taste.

Directions

Cook potato whole and then dice when cooled.
Cook hard boiled egg. Cool and dice.
In bowl mix diced potato, chopped hard boiled egg, chopped onion, olives, mustard. Stir in mayonaisse. Add salt and pepper to taste. Chill.
Serve on bed of lettuce or by itself.

This works best if the potatoes are still slightly warm and the mixture is allowed to chill for an hour or two. I do use all the above ingredients. It has been made with out the olives.
