Paleo Cupcakes with Chocolate Frosting

A wonderful and sinless dessert!

Ingredients

6 Organic Cage Free Eggs
1/2 cup of coconut flour
1/2 cup of grapeseed oil or coconut oil
1/2 Organic Raw Honey (melted)
1 TBSP Vanilla Extract
1 TSP Celtic Sea Salt
1/4 TSP Baking Soda
1 cup organic dark chocolate 70-80%
1/2 cup grapeseed or coconut oil
2 TBSP agave nectar or raw honey
1 TBSP Vanilla Extract
Pinch of Celtic Sea Salt

Directions

Cake Ingredients:
6 eggs
1/2 cup of coconut flour
1/2 cup grapeseed oil or coconut oil
1/2 cup honey
1 tbs vanilla extract
1 tsp sea salt
1/4 tsp baking soda
Directions:
Preheat oven to 350 degrees F.
Combine coconut flour, sea salt and baking soda in a large bowl. Stir to mix.
Combine eggs, grape-seed oil, agave and vanilla in a medium bowl. Stir to mix.
Pour wet ingredients into dry ingredients in large bowl. Use a hand mixer to make a smooth yellow cupcake batter.
Pour batter into well-oiled cupcake tins.
Bake for 20 minutes. Remove and cool completely.

Chocolate Frosting Ingredients:
1 cup dark chocolate 73%
½ cup grape-seed oil or coconut oil
2 tablespoons agave nectar or honey
1 tablespoon vanilla extract
pinch Celtic sea salt

Directions:
In a medium sauce pan, combine and melt chocolate, grape-seed oil, vanilla, salt and agave. Stir constantly.
Transfer to a bowl and place in freezer for 10 minutes to cool and thicken.
Pour chocolate into food processor or blender and whip.


I found this on a Paleo site and they are out of this world delicious! I made them for my mother-in-laws birthday and she ate 4 of them because she could not stop!
