Muffin with Honey

A coconut flour muffin with a touch of honey!

Ingredients

3 eggs
2 Tbsp. coconut oil (heated to liquify it)
2 tbsp coconut milk
3 tbsp honey
1/4 tsp sea salt
1/2 tsp vanilla
1/4 c coconut flour, sifted
1/4 tsp baking powder

Directions

Mix the eggs, coconut oil, coconut milk, honey, salt, and vanilla well. Blend coconut flour and baking powder. Add the two mixtures together and blend till there are no lumps. Evenly divide the batter into lined muffin tin (6). Bake for 15 mins.

This makes 6 muffins, serving is 2 for 1 protein.
