Fresh and delicious. Adjust the raw honey and celtic sea salt to your taste. For added nutrition, you can "sprout" your raw peanuts (www.sproutpeople.org), but I made this without any soaking of the peanuts.

Ingredients

16 oz. raw peanuts
2T coconut oil
1T raw honey
1 tsp celtic sea salt

Directions

Using a food processor, slowly add your peanuts. Once, they become a powder-like consistency, slowly drizzle in your coconut oil. You may need to scrape the sides of the bowl once in a while. Drizzle your honey and sea salt and continue to process until it reaches the consistency of peanut butter. Taste and add more honey or salt if you like, but remember to count as a carb if you add a lot more honey!

I took 2T of this and added some cayenne pepper and gluten-free tamarind sauce and coated cooked chicken in it - awesome!
