Fruit Salad with Coconut Glaze

Tropical fruit salad

Ingredients

2 cups halved strawberries
1 cup blueberries
1 cup red grapes
1 cup chopped peaches
1 large banana, sliced
1 large apple, sliced
For Glaze ...
6 ounces plain Greek yogurt
1/4 cup Coconut milk (unsweetened)
2 Tablespoons Stevia, raw honey or any coconut sugar that you'd prefer (Sweeten as much as you think is right)
1/4 teaspoon coconut extract
1/8 teaspoon almond extract
1/4 teaspoon lime juice

Directions

In a large bowl combine all of the fruit.

For the Glaze:
In another bowl combine all glaze ingredients until well mixed.

Add the glaze to the fruit bowl and toss to coat all fruit evenly. You can add some mint leaves if you'd like at this point.

Makes 6 Servings

So many fruits you could add or exchange for this salad. Or even add some raw nuts to it for more protein! My Mom sent me this recipe that she's been making for awhile and my family and I thought it was a wonderful treat especially as more fresh fruits come into season. I sprinkled some coconut slivers on top and it added to the taste without having to count it.
