Fried Zucchini

My mom created this recipe from an idea she got at a restaurant and it's FABULOUS!!

Ingredients

Zucchini
1 egg
About 3 Tbsp Coconut Milk
Sea Salt (to season the flax)
Coconut Oil
ground flax meal (enough to coat Zucchini)

Directions

1. Slice the Zucchini into thin, round slices after washing it.
2. While heating coconut oil in a deep frying pan, whisk egg and milk together to combine it.
3. Dip zucchini slices into egg/milk (make sure you coat both sides)
4. Dip zucchini slices into the flax (seasoned with sea salt). Also be sure to coat both sides!
5. Gently place coated zucchini slices into the heated coconut oil.
6. Fry zucchini slices on both sides until golden brown (about 2-3 minutes).
7. Remove from hot oil and place on a paper towel to drain some of the oil.
8. Enjoy! (Best when hot!)

Number of servings depends on how many zucchinis you use. One carb is approximately 1 cup of zucchini. I count the egg as 1 protein and the flax as 1 fat (although you probably don't get THAT much egg in 1 serving of zucchini).

Prep and cook times are approximate because it depends on how many zucchinis you use.
