Fresh Corn Salad

This is a "What you got? Use it!" kind of summer recipe. You can add whatever veggies you have in the fridge. Just be careful of the serving size.

Ingredients

4 ears of corn on the cob
1 tomato seeded, cored and chopped
small onion- chopped
green, red or Hungarian pepper- chopped
1 fresh lime or lemon
Fresh Cilantro or other herbs to taste
1 tbs. Olive oil

Directions

Microwave the corn in the husk, 6 minutes for 2 ears. Let the nuked ears sit in the husk while you cut up the rest of the veggies.
Chop the veggies and add to a mid-sized bowl. You can add whatever veggie you might have available- cucumber, zucchini, etc.
Cut the stalk end of the cob off the end of the corn. Grasp the silk at the top and pull the cob out of the husk through the "bottom". You might have to start to husk the corn, but you will find this is an easy way to deal with fresh corn.
Cut the corn off the cob, into the bowl with the rest of the veggies.
Chop the fresh herbs and add to veggies.
Cut the lime or lemon in half and squeeze it over the corn and veggies.
Add salt and pepper to taste.
Drizzle the olive oil over the salad.
Mix, chill and enjoy!!
