Christmas Salad

This festive salad can be made to serve 4 or 12 depending on the amount of each ingredient used.

Ingredients

chop broccoli - for 4 servings - 1 1/2 cup
chop red onion - for 4 servings - 1/3 cup
chop red bell pepper - for 4 servings 1 cup
add 1 can of red kidney beans - for 4 servings
add 3/4 cup of dried cranberries - for 4 servings
add 1 cup of chopped nuts (I prefer walnuts)
Raspberry Vinaigrette Dressing
1/2 cup raspberry vinegar
1/4 tsp. each salt & pepper
4 tsp. stevia blend
2 tsp. Worcestershire sauce
1 tbsp. Dijon style mustard
2 cloves of garlic, minced

Directions

Chop all ingredients and toss with your favorite vinaigrette dressing. I prefer raspberry vinaigrette and add 3/4 cup of fresh raspberries. Chill and serve. This is a very festive looking salad. For a larger salad double or triple each ingredient.
